Crispy on the outside, creamy on the inside, these Hasselback potatoes served with delectable sage bacon butter are a show-stopping side dish.

Hasselback Potatoes with Bacon Butter

Ingredients needed

  • Potatoes. Any variety of potato suitable for baking will work. Russet potatoes, Yukon Gold, Maris Piper or King Edward are some varieties that are suitable. Waxy potatoes won’t have a delicious creamy interior but can also work.
  • Olive oil.
  • Salt and black pepper.
  • Butter.
  • Crispy bacon.
  • Fresh sage. Other herbs like rosemary, fresh thyme, parsley or oregano will also be delicious.

What are Hasselback Potatoes?

Hasselback potatoes are baked potatoes sliced thinly, keeping the bottom intact so the potato fans out and the edges become crisp while baking. They make an excellent side dish and are the perfect vehicle for toppings like flavored butters and sour cream. They are called Hasselback Potatoes because of the Swedish restaurant, Hasselbacken in Stockholm, where they were created in 1953.

How to cut Hasselback potatoes

Place medium sized potatoes on a chopping board in front of you. Using a very sharp knife, carefully make thin slices into the potato, taking care not to cut all the way through. A good tip is to use two chopsticks or wooden spoons on either side of the potato to prevent the knife from cutting all the way through the potato.

How to make Hasselback potatoes

  1. Slice the potatoes: Carefully slice thin slices into the potatoes, taking care not to cut through. Place the potatoes on a sheet pan or in a baking dish then drizzle over olive oil (you can also brush the potatoes with melted butter) and season generously with salt and pepper.
  2. Bake: Place the potatoes in the oven and allow to bake for 30-45 minutes, depending on size, until the potatoes are crisp and golden on the outside and tender on the inside.
  3. Make the butter: While the potato bakes make the bacon butter. In a small bowl, mix the softened butter, crispy bacon, finely chopped sage, salt and pepper.
  4. Serve: Serve the crispy potatoes with a generous dollop of bacon butter.

Potatoes are the ultimate side dish and this recipe is no different. They are perfect served with roast chicken, steak, pork chops or salmon.

  • ¾ cup butter softened
  • ½ cup crispy bacon bits
  • 2 tsp chopped sage
  • ½ tsp black pepper
  • salt to taste
