To make the poppers, pre-heat the oven to 200°C/390°F and line a baking tray with baking paper/foil.
Halve the jalapeños and remove the seeds.
Stuff with the grated cheese then wrap with strips of bacon.
Place onto a parchment paper-lined baking sheet then place in the oven. Allow to bake for 15-20 minutes until the bacon is crisp and golden and the cheese is melted.
In a large bowl, combine the beef, bread crumbs, beaten egg and seasonings. Mix well then form into burgers.
Heat a large skillet or frying pan over medium-high heat. Add a splash of olive oil then add the burgers.
Cook for 4-5 minutes (depending on thickness) per side until a good crust has formed. Flip then top with cheese and place a lid on the pan to allow the cheese to melt.
Once the patties and poppers are cooked, toast the buns then build the burgers.
Add a generous smear of mayonnaise to the buns then add shredded lettuce and the burger patties.
Top with the jalapeño poppers and sandwich with the tops of the buns.
