These jalapeño popper burgers topped with bacon-wrapped, cheese-stuffed jalapeños are the ultimate, cheesy burger recipe and will be a guaranteed crowd pleaser.

Ingredients needed

I used a super simple burger patty recipe but feel free to use any burger of your choice, the star of the show is undoubtedly the bacon-wrapped jalapeño poppers. Feel free to add any of your favorite burger toppings but I kept it simple with shredded lettuce, mayo and cheese.

For the jalapeño poppers

  • Fresh jalapeños. 
  • Cheese: I used a combination of mozzarella and sharp cheddar/mature cheddar cheese. Substitute with any good melting cheese of your choice. You could mix cream cheese in with the grated cheese too if you preferred.
  • Bacon.

For the burgers

  • Ground beef/beef mince. 
  • Breadcrumbs. I used panko breadcrumbs but dried or fresh breadcrumbs can also be used.
  • Egg.
  • Seasoning: Smoked paprika, garlic powder, oregano, chilli flakes/red pepper flakes, salt and pepper.
  • Burger buns. 
  • Cheese. 
  • Lettuce. 
  • Mayonnaise.

How to make jalapeño popper burgers

  1. Make the bacon wrapped jalapeño poppers: Halve the jalapeños and remove the seeds. Stuff with the grated cheese then wrap with strips of bacon. Place onto a parchment paper-lined baking sheet then place in the oven. Allow to bake for 15-20 minutes until the bacon is crisp and golden and the cheese is melted.
  2. Make the burger patties: In a large bowl, combine the beef, bread crumbs, beaten egg and seasonings. Mix well then form into burgers.
  3. Cook the burgers: Heat a large skillet or frying pan over medium-high heat. Add a splash of olive oil then add the burgers. Cook for 4-5 minutes (depending on thickness) per side until a good crust has formed. Flip then top with cheese and place a lid on the pan to allow the cheese to melt.
  4. Assemble: Once the patties and poppers are cooked, toast the buns then build the burgers. Add a generous smear of mayonnaise to the buns then add shredded lettuce and the burger patties. Top with the jalapeño poppers and sandwich with the tops of the buns. Serve immediately.

Can I make this ahead?

The poppers can be assembled up to a day in advance and kept in an airtight container in the fridge before baking right before assembling the burgers. The patties can be made the day ahead too or frozen for up to 3 months. Thaw completely before cooking and serving.

Ingredients

for the burger patties

  • 500 g (1lb) beef mince/ground beef
  • ¼ cup panko breadcrumbs
  • 1 egg beaten
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • ½ tsp chilli flakes
  • 1 teaspoon salt
  • black pepper to taste

for the jalapeño poppers

  • 4 fresh jalapeños halved and seeds removed
  • 100 g (3oz) mature cheddar grated
  • 100 g (3oz) mozzarella cheese grated
  • 8 strips streaky bacon
  • 2 cups grated cheese (or cheese slices)

for the bacon

  • 4 sesame seed buns halved and toasted
  • mayonnaise
  • shredded lettuce

Instructions

  • To make the poppers, pre-heat the oven to 200°C/390°F and line a baking tray with baking paper/foil.
  • Halve the jalapeños and remove the seeds.
  • Stuff with the grated cheese then wrap with strips of bacon.
  • Place onto a parchment paper-lined baking sheet then place in the oven. Allow to bake for 15-20 minutes until the bacon is crisp and golden and the cheese is melted.
