Ingredients
6
cups
cooked grains
I used bulgur wheat
2
cups
green olives
pitted
3
cups
cucumber
chopped
1
cup
feta cheese
cubed
1-2
cups
fresh herbs
I used 1 cup of fresh basil leaves and quarter cup each chopped parsley and chopped chives
For the dressing

tbsp
olive oil

tbsp
fresh lemon juice

garlic clove
minced

tsp
salt

tsp
black pepper
Instructions
Cook the grains to package instructions. Once cooked, allow to cool to room temperature.
Transfer the cooked grains to a large mixing bowl then add the chopped cucumber and feta cheese. Add the olives and herbs.
Whisk together the dressing ingredients in a small bowl then pour over the salad.
Pour the dressing over the salad, toss to combine then serve.
