Ingredients
200
g (7 oz)
halloumi cheese
3
large
tomatoes
(or 3-4 cups cherry tomatoes)

English cucumber
½
red onion
handful
fresh basil leaves
For the dressing
3
tbsp
olive oil
2
tbsp
lemon juice
1
tbsp
red wine vinegar
1
tsp
salt
½
tsp
pepper
Instructions
Slice the tomatoes, cucumber and red onion then add to a large bowl.
Scatter over the fresh basil leaves.
In a small bowl, whisk together the oil, lemon juice, vinegar, salt and pepper.
Pour the dressing over the salad then toss to combine.
Preheat a grill pan or skillet over medium-high heat.
Slice the halloumi cheese into 1-2cm thick slices.
Grill the halloumi for 1-2 minutes per side until golden brown then remove from the pan and drain on paper towels.
Add the cheese to the salad and serve.
