Air fryer breakfast potatoes are quick, easy and delicious. They are perfect for breakfast or brunch but work just as well served as a side dish for dinner.
Chop the potatoes into small 1cm/⅓ inch cubes with a sharp knife.
Place the potatoes in a large bowl then add the chopped onions, olive oil and seasonings.
Toss to combine then transfer to your air fryer basket - no need to preheat the air fryer.
Air fry the potatoes at 375°F/190°C for 40-45 minute, giving the basket a shake every 15 minutes or so, until the potatoes are crisp, golden and cooked through.
Cooking time may vary depending on how large the cubes of potato are.
Remove from the basket then garnish with fresh herbs like parsley or chives (optional) and serve.
