This easy recipe can really be made as simply or as elaborate as you wish. I like to make them very simply but below are some recipe variations for you to try.

  • Potatoes. You can honestly use any potato you want for this recipe but I always tend to use floury potatoes as they cook better in my opinion. They become crisp and golden on the outside while staying creamy and fluffy on the inside. Russet potatoes or Yukon Gold potatoes are good options.
  • Onion. Other vegetables like bell peppers or fresh garlic can also be added.
  • Extra virgin olive oil. Vegetable oils like avocado oil is a good substitute.
  • Seasonings: I used salt, black pepper and garlic powder. Smoked paprika, onion powder, chili powder, red pepper flakes, etc. can all be used. You could also toss the air fried potatoes with minced garlic and Parmesan cheese for a delicious garlic parm version.

How to make breakfast potatoes in the air fryer

  1. Chop: Chop the potatoes into small 1cm/⅓ inch cubes with a sharp knife. I also don’t bother peeling the potatoes as the skin adds more flavor and is packed with fiber.
  2. Toss: Place the potatoes in a large bowl then add the chopped onions, olive oil and seasonings. Toss to combine then transfer to your air fryer basket – no need to preheat the air fryer.
  3. Air Fry: Air fry the potatoes at 375°F/190°C for 40-45 minute, giving the basket a shake every 15 minutes or so, until the potatoes are crisp, golden and cooked through. Cooking time may vary depending on how large the cubes of potato are. Remove from the basket then garnish with fresh herbs like parsley or chives (optional) and serve.

Can I make this ahead?

Although this air fryer breakfast potato recipe is definitely best served immediately after serving, leftovers can be kept in an airtight container in the fridge for up to 4 days. I would suggest reheating them in the air fryer until crisp before serving. If you’d like to meal prep this ahead for a breakfast party, cook the potatoes for 20 minutes then transfer to a sheet pan, allow to cool and cover with plastic wrap. Keep in the refrigerator overnight and finish the cooking right before serving.

Breakfast potatoes are of course, amazing served as part of a hearty breakfast or brunch with eggs, bacon, toast and any of your favorite breakfast foods. We love adding a vegetable side like creamy garlic parmesan mushrooms or sautéed spinach too. They’re also delicious on the side of omelets or quiche and make a fantastic filling for breakfast burritos or quesadillas.
