These easy applesauce fritters are the perfect fall-treat. Light and fluffy, scented with warm spices, they are delicious either glazed or dusted in cinnamon sugar.

Stir together the flour, baking powder, salt, sugar and spices in a large bowl.
In a separate bowl, whisk together the apple sauce, eggs and milk.
Pour the wet ingredients into the bowl with the dry ingredients then mix until just combined.
Fold in the grated apple.
Heat approximately 2-3 inches (5-10cm) neutral vegetable oil (Canola oil or avocado oil are good options) over medium-high heat.
Using a cookie scoop, scoop spoonfuls of the batter into the hot oil, allowing the fritters to fry until golden brown on all sides and cooked through - approximately 4-5 minutes.
Remove with a slotted spoon and allow to drain on paper towel or a wire rack.
While the fritters fry, make either the glaze or the cinnamon sugar.
Dust/drizzle the fritters with the sugar or glaze then serve.

Why did my apple fritters get soggy?If the oil you're frying in isn't hot enough or you overcrowd the pan with batter, your fritters are more likely to be soggy. Make sure the oil is hot enough - I prefer frying at around 350°F/180°C.How wet should fritter batter be?The batter should be thin enough to drop off a spoon but not so thin that it's watery. As thick as pancake batter is a good guide.
