Instructions
Halve the passion fruit and scoop the seeds and pulp into a small saucepan.
Stir in the freshly squeezed lemon juice, sugar and water then bring to a simmer over medium heat.
Remove from the heat.
Pass the lemonade through a fine mesh sieve to remove the seeds. I like adding a few spoonfuls of seeds back to the lemonade for aesthetic purposes but this is optional.
Allow to cool then transfer to a jug, pitcher or fridge-safe containers and serve over ice.
For a delicious cocktail, add a shot of vodka, gin, tequila or rum to a glass over ice then top with the passion fruit lemonade and finish with a splash of sparkling water. Add garnishes like lemon slices and fresh mint then serve.
