Ingredients
- 2 cups passionfruit pulp I used fresh passionfruit but frozen or canned can also be used (I used 12 medium-sized passion fruit)
- 1 cup fresh lemon juice
- 1 cup sugar add more if you want it sweeter
- 4 cups water
- ice to serve
Instructions
- Halve the passion fruit and scoop the seeds and pulp into a small saucepan.
- Stir in the freshly squeezed lemon juice, sugar and water then bring to a simmer over medium heat.
- Remove from the heat.
- Pass the lemonade through a fine mesh sieve to remove the seeds. I like adding a few spoonfuls of seeds back to the lemonade for aesthetic purposes but this is optional.
- Allow to cool then transfer to a jug, pitcher or fridge-safe containers and serve over ice.
- For a delicious cocktail, add a shot of vodka, gin, tequila or rum to a glass over ice then top with the passion fruit lemonade and finish with a splash of sparkling water. Add garnishes like lemon slices and fresh mint then serve.
