Ingredients

  • Chicken. Cooked, shredded chicken. Rotisserie chicken is great here.
  • Canned peaches. 
  • Flaked almonds. 
  • Spring onion/Green onion.
  • Mayonnaise. 
  • Sour cream.
  • Chutney. Any fruit chutney will work. If you can’t find chutney, sweet chilli sauce can be substituted.
  • Curry powder. 
  • Salt and pepper.
  • Salad leaves.

How to make Coronation Chicken salad

  1. Cook the chicken: If cooking your own chicken, combine water, salt, bay leaf, pepper and lemon peel in a saucepan. Bring to a gentle simmer then add chicken breasts. Poach for 8-10 minutes or until the chicken is just cooked, remove and allow to cool then shred.
  2. Make the dressing: Whisk together mayonnaise, sour cream, curry powder, chutney, salt and pepper together.
  3. Make the salad: Combine the chicken with the dressing then add chopped peaches, flaked almonds and spring onion. Mix well. Add salad leaves of your choice to a serving bowl then top with the Coronation chicken. Sprinkle with chopped parsley and almonds then serve as is or as a filling for sandwiches.

Can I make this in advance?

Coronation chicken can be made up to 2 days in advance and kept in an airtight container in the fridge. Leftovers will last for 2 days in the fridge.

  • 500 g (1lb) chicken breasts (alternatively use shredded rotisserie chicken)
  • 2 tsp salt
  • 1 tsp pepper
  • 1 bay leaf
  • 2 pieces lemon peel

For the Coronation chicken salad

  • ½ cup mayonnaise
  • 2 tbsp sour cream
  • 1 tsp curry powder
  • 1 tsp salt
  • 1 tbsp chutney
  • pinch of pepper
  • ¼ cup flaked almonds
  • ½ cup canned peaches roughly chopped
  • 2 cups salad leaves of your choice
