  • Chicken. Boneless, skinless chicken breasts.
  • Breadcrumbs. I made my own in a food processor from stale bread but you can use store-bought/Panko breadcrumbs too.
  • Bacon. Streaky bacon is best for this. You want a good amount of fat to add flavor to the crumbs.
  • Garlic.
  • Parsley.
  • Oregano.
  • Paprika.
  • Olive oil.

How to make bacon crusted chicken

  1. Make the bacon crumb coating: Place the bacon in the Airfryer. Cook at 180ºC for 10 minutes or until the bacon is super crispy. The bacon needs to be very crisp because we’ll be blending it into the crumbs. Remove the crispy bacon from the Airfryer and allow to cool. Once cooled, place the bacon in a food processor and blend until fine. If you’re using stale bread, you can blend the bread with the breadcrumbs. Combine the bacon, breadcrumbs, garlic, herbs, salt and pepper together and mix well.
  2. Bread the chicken: Whisk the eggs into a bowl. In a separate bowl, add the flour and season with salt and pepper. Coat the chicken first in the flour, then in the eggs and finally in the breadcrumbs. Press the breadcrumbs onto the surface of the chicken to make sure the chicken is well-coated.
  3. Cook the chicken: Place the chicken breasts into the Airfryer and cook at 180ºC for 10 minutes until golden brown. Carefully flip the chicken over and cook for another 3-5 minutes until the chicken is crisp, golden and cooked through. Remove and allow to rest for 5 minutes then serve.
