Baked sweet potato served with whipped honey butter is the ultimate side dish for fall/autumn. Sweet, buttery and so comforting.

- Sweet potatoes.
- Olive oil.
- Salt.
- Butter.
- Honey.
How to bake sweet potatoes
- Prepare the sweet potatoes: While the oven is preheating, scrub the sweet potatoes clean and place in a roasting dish then drizzle with olive oil. Season generously with salt and rub the oil and salt into the sweet potato skin.
- How long to bake sweet potatoes: Smaller sweet potatoes can be baked for 30-45 minutes at 200°C/400ºF while larger sweet potatoes might need up to an hour. The potatoes are done when a sharp knife can easily be inserted. Sweet potatoes are forgiving and can be baked at lower temperatures for longer with similar delicious results.
- Make the whipped honey butter:Â Whip softened butter with honey (or maple syrup) until light and fluffy. Season with salt and set aside.
- Serve:Â Once the potatoes are baked, remove from the oven and allow to rest for 5 minutes then make a long cut in the top of each sweet potato. Add a generous dollop of honey butter and serve.
Can I make this ahead?
The sweet potatoes can be baked up to 2 days ahead and reheated in a hot oven. The whipped honey butter can be made up to a few weeks in advance and kept covered in the fridge. I often pop a few into the oven, wrapped in foil, directly on the oven racks while I’m making a roast chicken or while something else is baking to maximize the oven being on already and to make meals throughout the week a little easie.r

Ingredients
- 6 medium sweet potatoes washed
- 2 tbsp olive oil
- 1 tbsp flaky sea salt
For the whipped honey butter
- ¾ cup butter
- 3 tbsp honey
- pinch of salt
Instructions
- Preheat the oven to 200°C/400°F.
- While the oven is preheating place the sweet potatoes in a roasting dish then drizzle with olive oil. Season generously with salt and rub the oil and salt into the sweet potato skin.  Â
- Place the sweet potatoes in the oven and bake for 45-60 minutes or until a sharp knife can easily be inserted.
- While the sweet potatoes are baking, whip softened butter with honey (or maple syrup) until light and fluffy. Season with salt and set aside.
- Once the potatoes are baked, remove from the oven and allow to rest for 5 minutes then make a long cut in the top of each sweet potato. Add a generous dollop of honey butter and serve.Â
