Baked Sweet Potato with Whipped Honey Butter

Baked sweet potato served with whipped honey butter is the ultimate side dish for fall/autumn. Sweet, buttery and so comforting.

Ingredients

  • Sweet potatoes.
  • Oil. I used extra-virgin olive oil but avocado oil or macadamia oil are also good options.
  • Salt. I kept this recipe simple but you can add any spices of your choice. Black pepper, garlic powder, ground cumin, smoked paprika and cinnamon are all delicious with sweet potatoes.
  • Butter. I always use salted butter as that is what I have on hand most often. Feel free to use unsalted butter. To keep this recipe vegan, use vegan butter as substitute.
  • Honey. Maple syrup is a good substitute.

How to bake sweet potatoes

  1. Prepare the sweet potatoes: While the oven is preheating, scrub the sweet potatoes clean and place in a roasting dish/rimmed baking sheet then drizzle with olive oil. Season generously with salt and rub the oil and salt into the sweet potato skin.
  2. How long to bake sweet potatoes: Smaller sweet potatoes can be baked for 30-45 minutes at 200°C/400ºF while larger sweet potatoes might need up to an hour to be fork tender. The potatoes are done when a sharp knife can easily be inserted. Sweet potatoes are forgiving and can be baked at lower temperatures for longer with similar delicious results.
  3. Make the whipped honey butter: Whip softened butter with honey (or maple syrup) until light and fluffy. Season with salt and set aside.
  4. Serve: Remove the baked potatoes from the oven and allow to rest for 5 minutes then make a long cut in the top of each sweet potato. Add a generous dollop of honey butter and serve.
  5. TIP: We use this baking method whenever we need to cook sweet potatoes for dishes like sweet potato soup or mashed sweet potatoes.

Can I make this ahead?

The sweet potatoes can be baked up to 2 days ahead and reheated in a hot oven. The whipped honey butter can be made up to a few weeks in advance and kept covered in the fridge. I often pop a few into the oven, wrapped in foil, directly on the oven racks while I’m making a roast chicken or while something else is baking to maximize the oven being on already and to make meals throughout the week a little easier.

What to serve with baked sweet potato

These sweet potatoes are delicious as a side dish and make meal prepping a breeze. As a side dish, serve with lemon herb roast chicken, salt and pepper pork belly or broiled pork chops for a delicious weeknight dinner.

  • 2 tbsp olive oil

For the whipped honey butter

  • ¾ cup butter
  • 3 tbsp honey
  • pinch of salt

Instructions

  • Preheat the oven to 200°C/400°F.
  • While the oven is preheating place the sweet potatoes in a roasting dish then drizzle with olive oil. Season generously with salt and rub the oil and salt into the sweet potato skin.   
  • Place the sweet potatoes in the oven and bake for 45-60 minutes or until a sharp knife can easily be inserted.
  • While the sweet potatoes are baking, whip softened butter with honey (or maple syrup) until light and fluffy. Season with salt and set aside.
  • Once the potatoes are baked, remove from the oven and allow to rest for 5 minutes then make a long cut in the top of each sweet potato. Add a generous dollop of honey butter and serve.
