A while ago I was approached to be part of a fabulous campaign for one of my favourite brands, Mediterranean Delicacies. It took almost no time for me to say Yes Yes YES!! I’ve always loved their products as my mom was an absolute Mediterranean nut (even though she had never actually been there). Mediterranean Delicacies (MD) Â offers an enormous range of products at really reasonable prices so you get to feel like you’re lying on an island in the Med, eating delicious Meze all year long.
Over the next few months you can expect my blog to take on a very Mediterranean feel as I’ll be incorporating these delicious products into my everyday cooking (which is not hard as they are of excellent quality). And isn’t the timing just perfect? As people are getting ready to go on their annual holidays, more and more time will be spent on the beach or lounging around and at times like that, I definitely don’t feel like being in the kitchen for hours. I’m here to tell you that it’s ok if you resort to opening a few tubs of delicious meze for your guests, as long as they are great quality and paired with delicious wine, of course!
Using MD’s Danish Feta, I decided to make these delicious courgette rolls to get us started. Let me just start by saying that MD’s Danish Feta is by far one of the best I’ve ever tasted. It’s smooth, creamy and has the perfect ‘softness’ while being pleasant to eat and not over-salted like so many Feta’s tend to be. My non-feta-eating-husband has absolutely fallen in love with this Feta and now requests it with every meal.
I know this might seem a bit fiddly but the only real work you have to do is grill the courgettes which can be done on the braai or in a griddle pan. And if you have a food processor, just whizz up the feta filling ingredients in there to make it easier for yourself. I like to pat the grilled courgettes dry with paper towels before spreading the feta mixture on them as that just helps the mixture stick better. I served these along with some of MD’s Kalamata olives, MD Hummus and grilled sourdough bread. And of course generous amounts of wine!
Makes approximately 10 rolls (great served as part of a meze platter)
5 large courgettes, washed and sliced into thin slices, lenghways
100g Mediterranean Delicacies Danish Feta
2 tbsp fresh mint, finely chopped
1 chilli, finely chopped
fresh rocket
juice of ½ lemon
salt & pepper to taste
- Brush the courgette slices with olive oil and grill in a griddle pan until cooked through. Remove and allow to cool slightly.
- Combine the feta, mint and chilli and lemon juice in a food processor and blend until everything is mixed through.
- Spread the feta mixture on the grilled courgette slices, followed by a piece of fresh rocket and roll up.
- Serve with other Mediterranean Delicacies items such as olives and hummus with thick slices of grilled bread.
These look amazing! I’m going to make them for my mothers birthday party. Do you think two days advance on these will be okay?
I’ve never made them that far in advance. I think you could probably push to a day in advance but I would still assemble on day of serving. So grill the courgette, make the filling, etc. but then roll on the day.
I’ve amended the recipe. 🙂 Just add it to the Feta mixture.

This looks delicious. It reminds me of a Nigella Lawson recipe, but with courgette instead of eggplant. It’s a good thing I love courgette way more!
