Spicy Cheesy Scrambled Eggs
These spicy cheesy scrambled eggs recipe is my go-to when I want something delicious for breakfast in a flash.

Ingredients
- Eggs.
- Heavy cream. Milk or half and half can be used instead.
- Salt and black pepper.
- Feta cheese. I love the texture of the feta cheese in scrambled eggs but use any grated/shredded cheese of your choice. Cheddar cheese, Gouda, Gruyere, Mozzarella, Parmesan, etc. all work well.
- Fresh red chilli. Chilli flakes can be used as substitute.
- Chives, to serve.
For a higher-protein version, stir smooth cottage cheese into the eggs before cooking and use a combination of whole eggs and egg whites. The cottage cheese disappears completely into the eggs and makes them creamier and fluffier while adding a significant protein boost. You can keep the spicy cheesy version as-is and add the cottage cheese, or make a simpler version with just eggs, cottage cheese, egg whites, salt and pepper. Both are delicious. How to make cheesy scrambled eggs
Crack the eggs into a medium bowl then add the cream. Season with salt and black pepper and whisk until the yolks and egg whites are completely homogenous. Heat a large skillet or pan over medium heat. Add a knob of butter or tablespoon of olive oil then add the chillies and cook for a minute. Pour in the eggs and cook for a minute then add the crumbled feta cheese. Stir with a rubber spatula to combine and cook until the eggs have formed curds but are still quite wet. The residual heat in the pan will continue cooking the eggs fully. Stir the eggs until cooked to your preference then serve over toast with and garnish with chives.
How to make scrambled eggs fluffy
The trick to fluffy scrambled eggs is to whisk the eggs thoroughly before cooking and stir them frequently in the pan, but not continuously. Stirring continuously will create French scrambled eggs with small soft curds. With fluffy scrambled eggs you also want the eggs to be cooked a little more so continue cooking the eggs off the heat until they are done to your preference.
What to serve with scrambled eggs
Toast is always the first option when it comes to cheesy scrambled eggs. I like thick slices of sourdough bread toasted until golden and spread with a generous amount of butter. Avocado toast is always a great option too.These spicy eggs are phenomenal in breakfast tacos or burritos and make delicious breakfast sandwiches.

For the high protein eggs
- Whisk the whole eggs, egg whites and cottage cheese together until smooth then whisk in the salt and pepper.
- Melt a small knob of butter (or use olive oil spray) in a large frying pan set over medium-low heat.
- Add the eggs and cook gently for 4-5 minutes until the eggs are just firm. Overcooking the eggs can cause the cottage cheese to release whey. This is not an issue but the eggs might be ever so slightly watery.
