These cheesy breakfast quesadillas with ham and avocado are quick to make and the perfect way to start your day.

Ham and Cheese Breakfast Quesadillas

Ingredients

Full recipe and amounts can be found in the recipe card below. 

  • Tortillas. I used flour tortillas but you can use corn too.
  • Eggs. 
  • Ham. Any thin slices of ham or cold cut will work.
  • Cheese. I used mature cheddar. Any good melting cheese will be delicious.
  • Cream. Milk can be substituted.
  • Chives. 
  • Salt and pepper. 
  • Red chillies.
  • Avocado, for serving.

Ham and Cheese Breakfast Quesadillas

How to make Breakfast Quesadillas

  1. Cook the eggs: In a medium-sized bowl, whisk the eggs, cream, salt and pepper together. Heat a large, non-stick pan over medium heat and add a teaspoon of butter or oil. Pour in the eggs and add the chives and chillies. Allow to set around the edges then push the edges into the middle of the pan with a spatula or wooden spoon. Cook until the eggs are done to your preference.
  2. Make the quesadillas: Place a tortilla in front of you and add a little cheese, a few slices of ham and a few spoonfuls of egg to one half of the tortilla, then fold over to seal. Cook in a large pan over medium-low heat until golden brown on both sides with the cheese completely melted. Remove then serve with avocado and salsa of your choice.

  • 2 tbsp chives chopped
  • 1-2 tsp red chilli chopped
  • salt and pepper to taste
  • 4 tortillas
  • 2 cups grated cheddar cheese
  • 4-8 slices ham
