4 Make-Ahead Lunchbox Snacks Kids Love

I feel you! That’s why I’m sharing my go-to meal prep strategy for lunchbox fillers and after-school snacks that makes the entire week SO much easier.

What I’m Prepping:
1. Banana Oatmeal Muffins
Lightly sweetened muffins made with ripe bananas and wholesome oats! These are perfect for breakfast, lunchbox treats or afternoon snacks. They’re moist and packed with fibre. Plus, they freeze beautifully – just grab one in the morning and it’ll be perfectly thawed by lunchtime!

Meal Prep Win:Â Freeze for up to 3 months, grab-and-go ready.
2. Chicken Meatballs

Tender, flavorful chicken meatballs that are baked or air fried. These are perfect for lunchboxes (kids can eat them cold or reheated), after-school protein snacks or even dinner. They’re mild enough for picky eaters but packed with flavor everyone loves. I used the chicken meatballs from my Marry Me Chicken Meatballs recipe and just air fried them for 12 minutes until golden brown and cooked through.

Meal Prep Win:Â Make a big batch, refrigerate for 5 days or freeze for 3 months.
3. Healthy Marinated Chicken Tenders

Juicy, perfectly seasoned chicken tenders that aren’t fried or breaded! The simple marinade ensures they’re flavorful and tender, not dry. Kids love eating these cold in lunchboxes or warmed up for after-school snacks. Pair with dipping sauces for extra appeal!

4. Bacon Corn Fritters

Savory, golden fritters loaded with sweet corn and crispy bacon! These are like little flavor bombs that kids devour. Serve them cold in lunchboxes, warm them up for after-school snacks or even pack them for breakfast. They’re surprisingly versatile and always a hit!

Meal Prep Win:Â Refrigerate for 4-5 days, reheat beautifully.
My Meal Prep Strategy:
Sunday Prep Session:
- Bake the muffins and meatballs while prepping other recipes.
- Marinate the chicken tenders (cook them Sunday evening or Monday morning).
- Make the corn fritters while everything else is cooling
- Total active time: About 90 minutes for a week of snacks!
Storage:
- Muffins: Freeze in individual portions.
- Meatballs: Refrigerate half, freeze half.
- Chicken tenders: Refrigerate in airtight containers or freeze in smaller portions for quick-cooking during the week.
- Fritters: Refrigerate in single layers.
Throughout the Week:
- Grab muffins from freezer for lunchboxes (they thaw perfectly by lunch).
- Pack 2-3 meatballs or tenders for protein.
- Add a fritter or two for variety.
- Rotate items so kids don’t get bored.
