We all love soup season because let’s be honest, what’s not to love? The weather cools down, the leaves turn all shades of orange and we get to spend cozy nights in. Fall isn’t fall without a big pot of soup simmering away on the stove. I LOVE soup and it’s one of the things I’m most excited about when the seasons change.

I’m also not fussy about soup. Smooth and creamy? Love it. Chunky, hearty and full of flavor? Gimme! What’s great about is soup is that it’s a fantastic meal to prep ahead and freeze for nights where you don’t have time to cook from scratch or as a quick lunch served with some crusty bread.

Tips for making the best soup

  • Go bold or go home. There’s no excuse for bland soup. The best way to build flavor in your soup is to use a mirepoix of onion, carrot and celery to start the soup with. This adds incredible depth of flavor. Herbs like oregano, thyme, rosemary, parsley, bay leaf and sage and spices like coriander, cumin, paprika and turmeric also work well in most soup recipes. Don’t be afraid to experiment.
  • Salt, salt, salt. Most of the time when a soup is lacking, it’s because it hasn’t been seasoned enough. Seasoning at every step of the process means the salt has time to pull out all the natural flavors from the vegetables you’re using.
  • Add some acid. A squeeze of lemon juice/lime juice or a drizzle of vinegar makes a massive difference to something like a soup or stew. The brightness it adds is often the missing link to making your dish as delicious as it can be.
  • Don’t rush it. We are all in a rush to cook dinner at night but most soups benefit from slow simmering – especially if there are root vegetables involved. Allow the soup to simmer on medium-low heat to extract all the flavor and ensure the meat and veggies are tender and delicious.
