Air fryer potato wedges

The Air Fryer is a great appliance all around but it really shines when making crispy potatoes. These delicious air fryer potato wedges seasoned with smoked paprika, garlic powder and black pepper are the perfect side dish or snack served with your favorite dipping sauces.

Ingredients

  • Potatoes. Any potato variety will work well for wedges. Both fluffy and waxy potatoes work for potato wedges although I prefer using starchy potato varieties like Russet potatoes, King Edward, Maris Piper, Yukon Golds, etc. This recipe works well with sweet potato wedges too.
  • Olive oil. 
  • Spices: I used smoked paprika, black pepper, garlic powder and chilli flakes/red pepper flakes. Dried herbs like oregano, thyme or parsley will also be delicious as will other seasonings like chili powder, cajun seasoning, onion powder, etc.
  • Salt.
  • Fresh herbs, to serve. I used chives but fresh parsley can also be used as garnish.

How to make air fryer potato wedges

Slice potatoes into wedges using a sharp knife and cutting board, by cutting each potato in half lengthwise. Slice each half into four wedges. Place the potatoes in a large bowl and add the olive oil and seasonings. Toss to coat, making sure each piece of potato is coated in spices. Transfer the potato wedges to the air fryer basket then air fry at 200ºC/400ºF for 15-20 minutes. If the potatoes brown too fast, turn the temperature down to 180ºC/350ºF. Cook until the potatoes are fork tender and fluffy on the inside but crisp on the outside, turning them over half way through cooking.

Remove the crispy potato wedges from the air fryer then sprinkle over chopped herbs and serve with your favorite dipping sauce.

Can I make this ahead?

Potato wedges are definitely best served immediately but you can slice the potatoes and soak them in cold water for up to 6 hours then pat dry with paper towels, season and air fry. Leftovers can be kept in the fridge for up to 3 days in an airtight container and reheated in the air fryer.

This is a great gluten-free side dish recipe and is a great alternative for French fries served with everything from chicken to steak and salmon. It’s also a delicious snack or easy appetizer served with dipping sauces (like spicy mayo) and ketchup.
