Crisp on the outside and fluffy on the inside, these courgette fritters are easy to make and a great way to use courgettes when they are in season.

Ingredients Needed

  • Courgette/zucchini.
  • Flour. I used all purpose flour/plain flour. You could use self-rising flour, just remember to omit the baking powder.
  • Salt and black pepper.
  • Milk. I used whole milk but use any plant/nut milk of your choice.
  • Egg.
  • Oil. I used olive oil but melted butter can be substituted.
  • Cheese. A good strong cheese like mature/aged cheddar, gruyere, etc. Crumbled feta cheese would also be delicious.
  • Optional: Fresh herbs like mint, parsley, dill or basil are all delicious with courgettes and can be added to the batter. As can finely chopped spring onions/scallions.

How to make Courgette Fritters

  1. Prepare the courgettes: Grate the courgettes/zucchini on a box grater. Transfer to a colander/strainer and season with a teaspoon of salt. Stir to combine then allow the courgettes to drain for 10 minutes.
  2. Make the batter: Squeeze as much excess liquid out of the courgette as you can then add to a medium bowl. Add the remaining ingredients then mix well until the batter is thick and creamy.
  3. Cook the fritters: In a large skillet or frying pan, heat a splash of vegetable oil then working in batches, fry spoonfuls of the mixture for 1-2 minutes per side until golden brown and cooked through. Remove with a spatula and allow any excess oil to drain on paper towel and continue with the remaining batter.
  4. Serve: Serve the fritters with lemon wedges and a sauce of your choice while hot.

Can I make this ahead?

Fritters are a fantastic make-ahead dish. Leftovers can be kept in an airtight container in the refrigerator for up to 4 days and reheated in the microwave oven or air fryer until hot throughout.

Serving Suggestions

These fritters are amazing with a quick and easy garlic yogurt dip as a simple appetizer. Other delicious sauces to serve with the fritters are Greek tzatziki or jalapeño ranch. We also love them served with fried eggs and crispy bacon for brunch. Mini fritters can be topped with crème fraîche/sour cream and smoked salmon for an elegant hors d’oeuvre.

Ingredients

  • 5 large courgettes (approximately 4 cups), grated
  • ¾ cup flour
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup milk
  • 1 egg
  • 1 tbsp olive oil
  • 1 cup grated cheddar cheese

Instructions

  • Grate the courgettes and place in a colander. Season with a teaspoon of salt and massage the salt into the courgette. Allow to sit for 10 minutes then squeeze out as much moisture as you can.
  • Transfer the courgette to a bowl and add the flour, baking powder, seasonings, milk, egg and oil. Mix until well combined then fold in the cheese.
  • Heat a splash of oil in a large skillet or frying pan.
  • Once hot, carefully drop spoonfuls of the batter into the hot oil. Allow to fry for a 1-2 minutes per side until golden brown and cooked through.
  • Remove with a spatula then repeat with the remaining batter.
  • Serve with a squeeze of lemon and your sauce of choice.
