Easy Apple Galette
This easy apple galette made with store-bough puff pastry is the perfect dessert if you love apple pie but don’t want to fuss with pie dough, filling, etc.

Ingredients and Substitutions
Apple galette is often made with pie dough or shortcrust pastry but I prefer using puff pastry. Not only is it so easy to use store-bought pastry but I love how buttery and flaky puff pastry is once baked. Feel free to use any pie crust of your choice.
- Puff pastry. Use thawed puff pastry.
- Apples. I love using Granny Smith apples because of their crisp, tartness. Other good options are Fuji, Gala or Pink Lady apples.
- Sugar. White sugar or brown sugar can both be used.
- All purpose flour.
- Cinnamon. Other warm spices like nutmeg, all spice, cloves and cardamom can also be added.
- Salt.
- Egg, for egg washing.
- For serving: Salted caramel sauce and vanilla ice cream.

How to make Apple Galette
- Prepare the apples: Peel the apples using a vegetable peeler then slice into thin slices, discarding the core. You can also chop the apples into small pieces. Place the apple slices in a large bowl then add the sugar, salt and cinnamon. Toss well.
- Assemble: I prefer using a skillet to bake the galette but a sheet pan, baking sheet or pie dish can also be used. Place the thawed sheet of puff pastry on a piece of parchment paper. Add the apple mixture to the center of the pastry and fold the edges into the middle of the galette. Brush the pastry with beaten egg and sprinkle with a little more sugar (optional).
- Bake: Bake the galette in a preheated oven on the bottom rack of the oven for 30-40 minutes or until the pastry is golden brown and crisp and the apples are cooked. Remove from the oven then serve with salted caramel sauce and a scoop of vanilla ice cream.
Can I make this ahead?
The galette is definitely best served right after baking but any leftovers can be kept in an airtight container in the fridge for up to 3 days and reheated in the oven until hot.

FAQ
Galettes are rustic, free-form pies made with a filling consisting of fruit, sugar and spices encased in pastry.
Baking the galette on the bottom rack of the oven will help the bottom crust to crisp up. Adding a few tablespoons of flour will also help the juices thicken up and prevent a soggy bottom.
