Easy One Pan Baked Dumplings

These viral baked dumplings are a one-pan weeknight wonder and so easy to make. Saucy broth and frozen dumplings combine into the ultimate quick cozy comfort meal.

One Pan Baked Frozen Dumplings.

Ingredients and Substitutions

The sauce is made with coconut milk, Thai red curry paste and a few other pantry staples. Use any frozen dumplings or pot stickers of your choice and add vegetables like spinach or bok choy if you like. This one pan dumpling dinner is easily customizable and you can add any veggies or protein of your choice.

  • Coconut milk. I used full fat coconut milk but lite coconut milk can be used too.
  • Thai red curry paste.
  • Soy sauce.
  • Rice vinegar. Lime juice can be substituted.
  • Fresh garlic cloves.
  • Fresh ginger.
  • Frozen dumplings. I used shrimp potstickers but chicken, pork or vegetable dumplings or gyoza would be delicious too.
  • Optional: Add fresh baby spinach or chopped bok choy. Add a splash of sesame oil or fish sauce for more flavor. Serve over cooked ramen noodles for the ultimate treat.
  • To serve: Chopped scallions/spring onions/green onions, sliced chillies and chilli crisp/chilli crunch oil is non-negotiable. Cilantro and sesame seeds can be added too.

How To Make Viral Baked Dumplings

  1. Stir together the sauce ingredients and pour into a baking dish or casserole dish.
  2. Add the dumplings to the curry broth in a single layer. Add the vegetables, if using.
  3. Cover with foil and bake.
  4. Serve with green onions and a generous drizzle of chili oil.

Cook’s Tips

  • For a brothier sauce, add a half cup of chicken stock/chicken broth to the sauce before baking.
  • No need to thaw the dumplings, they bake from frozen making this recipe even easier.
  • Add any quick-cooking veggies or protein of your choice. Shrimp would be fantastic.
  • Leftovers can be kept in an airtight container in the fridge for up to 3 days. Reheat in the microwave before serving.

Ingredients

  • 14 oz (400g) coconut milk
  • 3 tbsp Thai red curry paste
  • ¼ cup soy sauce
  • 2 tbsp rice vinegar
  • 3 garlic cloves minced
  • 2 tsp minced ginger
  • salt to taste
  • 1 lb (500g) frozen dumplings / potstickers approximately 20 dumplings

To serve

  • chopped green onions/spring onions
  • sliced chillies optional
  • chilli oil / chilli crisp

Instructions

  • Preheat the oven to 350°F/180°C.
  • Whisk together the coconut milk, red curry paste, soy sauce, rice vinegar, ginger and garlic. Taste and adjust seasoning if necessary.
  • Pour into an oven-safe dish. The dish I used is 13x10in/34x27cm.
  • Nestle the frozen dumplings into the curry sauce and cover with foil.
  • Bake for 15 minutes until the dumplings are cooked through.
  • Scatter over garnishes and drizzle with chilli oil then serve.
