My kids are at that age now where everything I drink, they want to taste. That is fine when I’m having water or iced tea but when I’m indulging in a cocktail or spritzer, it’s less than ideal. I often make them a big pitcher of home-made lemonade so they also feel they’re being spoiled and find that the adults drink it before the kids get a chance to.
I love the pretty pink of this lemonade and the fact that it’s flavoured with one of my favourite summer flavours, watermelon. So simple to make and so delicious. I sometimes quadruple this recipe to make sure there is plenty to go around. It’s always a hit!
- 2 cups water
- 1 cup lemon juice
- 1.5 cups sugar
- 3 cups watermelon, pureed
- Bring the water, lemon juice and sugar to a boil in a saucepan. Make sure all the sugar has dissolved and remove from the heat.
- Allow the lemon syrup to cool before adding the pureed watermelon.
- When ready to serve, strain through a sieve and serve over ice. Top up with soda water if desired.
