Lychee Watermelon Mocktail

This watermelon mocktail flavored with lychee/litchi and fresh basil is inspired by our travels to Mauritius. It is by far the most delicious drink you can make at home and is a great option if you are looking for an alcohol-free treat.

Lychee Watermelon Mocktail

Ingredients

Although this is a mocktail (a non-alcoholic cocktail made with juice, fresh fruit, mixers, etc), you can add a splash of vodka, tequila or gin to it if desired. It’s a great drink to serve at baby showers or kids’ parties and is a great alternative if you’re trying to drink less alcohol.

  • Fresh watermelon.
  • Lychee/litchi juice. If you can’t find juice, use canned lychees.
  • Fresh basil.
  • Lemon juice.

How to make a watermelon mocktail

Cube and freeze watermelon in freezer bags for at least 6 hours. Blend the watermelon with lychee juice or canned lychees (along with their syrup), a handful of fresh basil and a generous squeeze of lemon juice. Blend until smooth then pour into serving glasses and serve. If you’re prefer to have no pulp in the mocktail, simply strain before serving.

Can I make this mocktail ahead?

Yes, this can be made up to 2 days in advance and kept in the fridge. The watermelon can be frozen for up to 3 months.
