Cauliflower Cheese Pot Pie

If you love cauliflower cheese, you’re going to LOVE this cheesy cauliflower pot pie. It’s the perfect meat-free meal and great for dinner served with a simple salad or steamed greens. 

It’s also great for making ahead or freezing and will be a delicious side dish. Thanksgiving, Christmas, casual Tuesday dinner? This pot pie will work for it all.

Ingredients

  • Cauliflower. I always use fresh. Frozen cauliflower can cause the finished pie to be watery.
  • Olive oil. 
  • Salt.
  • Cheese sauce. 
  • Puff pastry. I used frozen sheets of puff pastry. Allow to thaw completely before using.
  • Egg.

How to make cauliflower cheese pot pie

  1. Roast the cauliflower: Cut the heads of cauliflower into florets. Don’t discard the stems, they are delicious when roasted. Place all the cauliflower into a roasting dish then drizzle over the olive oil and season with salt. Place in the oven and allow to roast for 30 minutes or until the cauliflower is golden brown and tender.
  2. Make the cheese sauce: Make the cheese sauce according to recipe instructions. Cheeses that go well with cauliflower are Gruyere, Cheddar, Havarti and Parmesan so add any of those to your sauce.
  3. Assemble the pot pie: Combine the cauliflower with the cheese sauce in a suitable oven-safe dish. Top with a sheet of puff pastry then brush with beaten egg. With a sharp knife, make a hole to allow steam to escape.
  4. Bake: Place the pot pie in the oven and allow to bake for 15-20 minutes until the pastry is golden brown and crisp. Remove from the oven and allow to cool for 5 minutes then serve.
