Cheese-stuffed mashed potato casserole

Creamy mashed potato casserole stuffed with melty cheese is the perfect side dish and makes a great main dish served with a side salad.

Ingredients

  • Mashed potatoes: Use any recipe you love but I used my garlic Parmesan mashed potato recipe for this.
  • Cheese: I used Raclette which is a good melting cheese. Fontina, Mozzarella, Cheddar and Havarti are all good options.
  • Panko breadcrumbs. 
  • Garlic. 
  • Olive oil. 
  • Salt and pepper.

How to make mashed potato casserole

  1. Prepare the mashed potatoes: Make the mash according to recipe instructions. You could also do this super simply and just boil potatoes until soft then mash with butter, a splash of milk and season with salt and pepper.
  2. Assemble the casserole: Layer half of the mashed potatoes in a casserole dish. Top with the cheese and add the rest of the mashed potatoes. In a small bowl, combine the breadcrumbs, garlic, salt, pepper and olive oil. Top the mashed potatoes with the breadcrumbs.
  3. Bake: Place the mashed potato casserole in a preheated oven and bake for 15-20 minutes or until the top is golden brown and the casserole is hot and bubbling. Remove from the oven, allow to cool for 5 minutes then serve scattered with chopped parsley.

Can I make this ahead?

The casserole can be fully prepped, ready to be baked, up to a day in advance. Assemble the casserole then cover with foil and refrigerate for up to 24 hours. Bake for 10-15 minutes longer if you’re baking straight from the fridge.

  • 2 cups grated cheese (Fontina, Raclette, Mozzarella, Cheddar, etc)
