Full recipe + amounts can be found in the recipe card below.
- Mashed potatoes: Use any recipe you love but I used my garlic Parmesan mashed potato recipe for this.
- Cheese: I used Raclette which is a good melting cheese. Fontina, Mozzarella, Cheddar and Havarti are all good options.
- Panko breadcrumbs.
- Garlic.
- Olive oil.
- Salt and pepper.
How to make mashed potato casserole
- Prepare the mashed potatoes: Make the mash according to recipe instructions. You could also do this super simply and just boil potatoes until soft then mash with butter, a splash of milk and season with salt and pepper.
- Assemble the casserole: Layer half of the mashed potatoes in a casserole dish. Top with the cheese and add the rest of the mashed potatoes. In a small bowl, combine the breadcrumbs, garlic, salt, pepper and olive oil. Top the mashed potatoes with the breadcrumbs.
- Bake: Place the mashed potato casserole in a preheated oven and bake for 15-20 minutes or until the top is golden brown and the casserole is hot and bubbling. Remove from the oven, allow to cool for 5 minutes then serve scattered with chopped parsley.
Can I make this ahead?
The casserole can be fully prepped, ready to be baked, up to a day in advance. Assemble the casserole then cover with foil and refrigerate for up to 24 hours. Bake for 10-15 minutes longer if you’re baking straight from the fridge.
