Easy Leftover Ham Breakfast Sandwich
This ham breakfast sandwich with egg and cheese is a great way to use Christmas leftovers and the perfect day-after-Christmas breakfast.

- English muffins.
- Leftover ham.
- Cheese. I used cheese slices but cheddar, gouda, mozzarella, fontina, Monterey Jack, etc. will all work.
- Eggs.
- Milk. I used full cream/whole milk but half and half can also be used.
- Chives. Parsley, green/spring onion, thyme and oregano are all good substitutes.
- Salt and pepper.
- Optional: Vegetables like peppers, mushrooms, spinach and onion can be added to the egg mixture to bulk it up and add more nutrients if required.
How to make a breakfast sandwich
- Cook the eggs: Whisk the eggs with the milk, salt and pepper. Heat a large, non-stick pan over medium heat then add oil or butter. Pour in the eggs and add the chives. Cover with a lid and cook until set. Once cooked, remove from the pan. I sliced it in half to make two breakfast sandwiches but you could cut out rounds or cut it into quarters, depending on how many people you are serving.
- Assemble the breakfast sandwich: Toast the English muffins in a hot pan until golden then add warmed sliced leftover ham, cheese and egg. Serve immediately.
How long is leftover ham good for
You can keep leftover ham in a sealed container in the fridge for up to 2 days. Ham can be frozen for up to 3 months.

- 2 English muffins
- 2 slices leftover ham
- 2-4 slices cheese
Instructions
- Whisk the eggs with the milk, salt and pepper.
- Heat a large, non-stick pan over medium heat then add oil or butter. Pour in the eggs and add the chives.
- Cover with a lid and cook until set. Once cooked, remove from the pan.
- Cut in half to serve two people.
- Toast the English muffins in a hot pan until golden then add warmed sliced leftover ham, cheese and egg. Serve immediately.
