Easy Grilled Tomatoes

This simple appetizer is all kinds of delicious. Juicy grilled tomatoes with creamy burrata cheese and fresh basil just screams summer.

Ingredients Needed

  • Tomatoes. I used a combination of cherry tomatoes and vine tomatoes. Feel free to use any ripe tomatoes you have. Roma tomatoes can be used, I would suggest grilling tomato halves instead of whole tomatoes.
  • Extra-Virgin Olive oil. 
  • Balsamic vinegar.
  • Salt and black pepper. 
  • Cheese: I used Burrata but grilled tomatoes are delicious with a variety of cheeses. Fresh mozzarella (Fior di Latte/Buffalo mozzarella, feta cheese, Parmesan cheese or goat’s cheese are all good with tomatoes.
  • Fresh basil. Other fresh herbs like chives, parsley and oregano can also be used.

How to grill tomatoes

Drizzle tomatoes with olive oil and balsamic vinegar. Place tomatoes on hot grill grates over high heat or in a grill pan until the tomatoes are golden brown with grill marks on all sides, approximately 10-15 minutes. Season the tomatoes generously with salt and pepper then serve warm or at room temperature.

Serving suggestions

This is a great side dish on its own or served with burrata and fresh basil as a simple appetizer or side served with focaccia bread or crusty bread. I also love using the warm tomatoes in Caprese salad and in pasta salads. We love it with grilled chicken or steak for simple, healthy summer meals.

Ingredients

  • 500 g (1lb) baby tomatoes
  • 2 tbsp olive oil
  • 1 tbsp Balsamic vinegar
  • pinch of salt and pepper
  • 150 g (5oz) burrata
  • 1 cup fresh basil

Instructions

  • Drizzle the tomatoes with olive oil and balsamic.
  • Grill over high heat for 10-15 minutes until charred and blistered.
  • Season with salt and pepper then drizzle with more olive oil and Balsamic.
  • Serve with burrata and fresh basil.
