Passion Fruit Syrup

I love having homemade drinks like ice tea, lemonade or fruit syrups in the fridge and during summer when so many fruits are in season, it just makes sense, right? This passion fruit syrup is one I make all the time because it works just as well with fresh passion fruit as it does frozen or canned pulp. The 3-ingredient syrup comes together quickly and will last for weeks in the fridge.
Ingredients and Substitutions
- Passion fruit. We are lucky to almost always have access to fresh passion fruit but feel free to use frozen or canned passion fruit pulp if you can’t find fresh.
- Sugar. Substitute with a sugar alternative if required – I don’t like honey or maple syrup in this as the flavor is too strong and competes with the aromatic passion fruit too much.
- Water.


How To Make Passion Fruit Syrup
It couldn’t be simpler: Combine all the ingredients in a saucepan and bring to a simmer. Once cooked, strain into a jug (I like to add some of the seeds back in) then cool. Keep in the fridge and serve over ice, topped with water or club soda/sparkling water. This syrup also works great as a base for cocktails and will be delicious with vodka or rum added.
Can I Make This Ahead?
Yes, this syrup can be made and kept in the fridge for up to 3 weeks. I like keeping it in mason jars but any sealed drinks container will work too.

Ingredients
- 2 cups (450g) passion fruit pulp
- 1 cup sugar
- 6 cups water
Instructions
- Halve the passion fruit (if using fresh), scoop out the seeds and add to a saucepan.
- Add the sugar and water.
- Bring the mixture up to a simmer over medium heat then allow to cook for 10 minutes until the sugar has dissolved and the syrup has thickened slightly. Pour the mixture through a sieve – I like to add a few spoonfuls of the seeds back to the syrup for prettier end result but this is optional.
- Allow the syrup to cool completely then transfer to glass jars or a jug and place in the refrigerator.
- To serve, pour ¼-⅓ cup of the passion fruit syrup over ice then top with water (still or sparkling will both be delicious).For a cocktail: Pour the syrup over ice, add a shot of vodka, tequila or rum then top with sparkling water or club soda and garnish with fresh mint and a lemon slice.
