Quick and Easy Prosciutto Melon Salad with Mozzarella
This quick and easy prosciutto melon salad with mozzarella is a delicious starter or side dish and is perfect for summer feasting.
Ingredients

- Melon. I used Cantaloupe but Honeydew melon will also work.
- Prosciutto.
- Mozzarella. I used bocconcini but any fresh mozzarella will work.
- Arugula / Rocket.
- Olive oil.
- Fresh lemon juice.
- Salt and pepper.
How to make Prosciutto Melon salad
- Prepare the ingredients: Halve the melon then scoop out the seeds. Using a melon baller, scoop balls of melon out and place in a bowl. Alternatively, chop the melon into cubes.
- Make the dressing: Whisk together the olive oil, lemon juice, salt and pepper.
- Make the salad: Place a bed of arugula/rocket into a serving bowl then add the melon balls and mozzarella. Add the prosciutto. Pour over the dressing and serve.
Can I make this ahead?
The melon can be balled and place in an airtight container the day before serving. The salad can be assembled (undressed) up to 2 hours in advance and kept covered in the fridge. Dress before serving.
