Roasted Chicken Thighs with White Wine Garlic Sauce

Juicy roasted chicken thighs cooked in a delicious white wine garlic sauce is the perfect, simple dinner recipe. Served with fluffy rice and greens of your choice, it’s a great family meal.

Ingredients needed

  • Chicken. I used bone-in, skin on chicken thighs but you can use any chicken pieces. Skin on chicken is best for this recipe as it protects the chicken from drying out and crisps up perfectly while roasting.
  • Butter/olive oil.
  • Fresh garlic cloves. 
  • Fresh herbs. You need a few tablespoons of fresh herbs for this recipe. Use any herbs you have or like. Thyme, rosemary, parsley, sage and oregano all work well with chicken.
  • White wine. I used Sauvignon Blanc but any dry white wine will be delicious.
  • Fresh lemon juice. 
  • Salt and black pepper.

How to roast chicken thighs

  1. Brown the chicken: Pat the chicken thighs dry with paper towels then season on both sides with salt. Heat a large skillet or ovenproof pan over medium-high heat then add the chicken, skin-side down. Allow to cook for 8-10 minutes or until the skin is golden brown. Remove the chicken from the pan and set aside.
  2. Make the sauce: In the same pan, melt the butter or heat the oil. Add the crushed garlic and herbs and cook until fragrant then pour in the white wine and lemon juice. Season with salt and pepper then add the chicken back to the pan, skin-side up.
  3. Roast the chicken: Place the chicken in a hot oven and allow to roast for 10-15 minutes until the chicken is crisp and cooked through. Remove the chicken from the oven then scatter with chopped parsley (optional) and serve.

What to serve with roasted chicken thighs

Serve these chicken thighs with rice or mashed potatoes to soak up that delicious sauce. A simple vegetable side dish like sautéed broccolini or green beans and a zesty side salad will also be delicious.
