Creamy Mushroom Sheet Pan Chicken

Ingredients needed

  • Chicken. I used a whole chicken, cut into pieces but you can use any chicken of your choice. Chicken thighs and legs work well.
  • Mushroom. Use any mushrooms you have. I used a combination of larger brown mushrooms and halved portabellini/chestnut mushrooms.
  • Red onion. 
  • Fresh thyme. 
  • Extra-virgin olive oil.
  • Lemon juice. 
  • Chilli flakes. 
  • Fresh garlic cloves. 
  • Salt and pepper, to taste.
  • Sour cream.

How to make creamy mushroom sheet pan chicken

  1. Season and assemble: Mix together the olive oil, lemon juice, minced garlic, chilli flakes and fresh thyme. Season the chicken on both sides with salt and pepper then place in a large sheet pan. Add the mushrooms and chopped onion to the pan. Pour over the olive oil mixture. Add fresh thyme sprigs.
  2. Bake: Place the pan in a preheated oven and bake for 45 minutes until the chicken is cooked through and golden brown. Remove from the oven.
  3. Make the sauce: Remove the chicken from the pan. Stir the sour cream into the pan juices and adjust seasoning if necessary. Place the chicken back into the pan then bake for another 10 minutes then serve.

Can I make this ahead?

The entire dish can be assembled and covered with foil then kept in the fridge overnight before baking. Leftovers can be kept in an airtight container in the fridge for 2-3 days and reheated in the oven or microwave.

What to serve with mushroom sheet pan chicken

The creamy chicken is great served with mashed potatoes or steamed rice to soak up the delicious sauce. A simple vegetable side dish is a good idea too!

  • 1 kg (2lb) bone-in chicken pieces Alternatively use a whole chicken and cut it into pieces.
  • salt and black pepper to to taste
  • 500 g (1lb) mushrooms
  • 1 red onion roughly chopped
  • fresh thyme sprigs
  • 1 cup sour cream

Instructions

  • Preheat the oven to 180°C/350°F.
  • Mix together the olive oil, lemon juice, minced garlic, chilli flakes and fresh thyme.
  • Season the chicken on both sides with salt and pepper then place in a large sheet pan.
  • Add the mushrooms and chopped onion to the pan. Pour over the olive oil mixture. Add fresh thyme sprigs. 
  • Place the pan in a preheated oven and bake for 45 minutes until the chicken is cooked through and golden brown.
  • Remove from the oven. 
  • Remove the chicken from the pan.
  • Stir the sour cream into the pan juices and adjust seasoning if necessary.
  • Place the chicken back into the pan then bake for another 10 minutes then serve.

  1. Needed to use up some mushrooms so quickly googled recipes and this one popped up. Simple to make and totally delicious. We ate this served with crushed baby potatoes.
