Ingredients and Substitutions

I made my own easy bread dough for this recipe but you can absolutely use store-bought bread dough too.

  • For the bread dough: Flour, instant yeast, salt, sugar, olive oil, lukewarm water.
  • Brie cheese.
  • Egg for egg wash.
  • For the garnish: butter, garlic cloves, fresh sage.

How to make a baked brie bread wreath

  1. Make the dough by combining all the ingredients in the bowl of a stand mixer fitted with a paddle attachment and knead until a soft, smooth dough forms.
  2. Allow the dough to rise for an hour at room temperature then cut the dough into 32 even pieces then shape each into a ball.
  3. Line your largest baking sheet or oven-safe pan/dish with parchment paper then add a heatproof bowl to the middle. Place the dough balls around the bowl then allow to proof while you preheat the oven. Brush with beaten egg then bake for 10-15 minutes until golden brown.
  4. Remove the bread from the oven and carefully remove the bowl. Score the brie cheese and add to the center then bake for another 5-10 minutes until the brie is melted and the bread rolls are cooked through.
  5. While the bread wreath is baking make the garlic butter. Combine the butter, crushed garlic and chopped sage in a small pan, set over medium heat and allow to melt together.
  6. Brush the garlic butter over the bread rolls then scatter over crispy fried sage and serve.

Can I make this ahead?

The bread dough can be prepared the day ahead and kept in the fridge in an airtight container. Any leftovers can be kept in an airtight container.

We love serving this bread wreath as an appetizer on its own but it’s also fantastic served as part of a feast table with other apps like a cheese board, stuffed olives and maple glazed chipolatas. It’s also a delicious side dish with traditional Christmas mains like baked ham, roast turkey or roasted lamb.

Ingredients

  • 5 cups flour cake flour or all purpose flour will both work
  • teaspoons salt
  • 2 cups lukewarm water
  • 2 tsp (10g) instant yeast
  • 3 tablespoons sugar
  • 3 tablespoons olive oil
  • 1 egg for egg wash
  • 1 ½lb (750g) wheel of brie cheese

for the garlic butter

  • ½ cup butter
  • 3 garlic cloves crushed
  • 2 teaspoons chopped sage

Instructions

  • Combine the flour and salt in the bowl of a stand mixer fitted with the dough hook attachment.
  • In a jug, combine the lukewarm water, yeast and sugar and mix well.
  • Pour the yeast mixture into the flour and mix on a low speed until the dough starts to come together. Add the oil and continue mixing until the dough has come away from the sides of the bowl. Continue kneading for another 2 minutes.
  • If doing this by hand, follow the same directions but once the dough comes together in the bowl, turn out onto a floured surface and knead for 5 minutes.
  • If needed, add a little more water. The dough needs to be soft and smooth and a little sticky.
  • Once the dough has been kneaded, place in a greased bowl and cover with cling film. Allow to rise for 1 hour.
  • After an hour, knock back the dough and section the dough off into 32 even pieces. Form each piece of dough into a bread roll.
  • Line your largest baking sheet or oven-safe baking dish with parchment paper then place a heat-proof bowl the same size as your brie cheese in the center.
  • Place the dough balls around the bowl then cover and allow to proof while you preheat the oven.
  • Pre-heat the oven to 180°C/350°F.
  • Place the bread wreath in the oven and bake for 10-15 minutes until lightly golden.
  • Score the top of the brie cheese with a sharp knife, taking care not to cut all the way through.
  • Place the brie in the center of the bread wreath (after carefully removing the bowl) then place back in the oven and bake for another 5-10 minutes until the brie has melted and the bread rolls are cooked.
  • In the meantime, combine all the ingredients for the garlic butter in a small saucepan and melt together.
  • When the rolls come out of the oven, brush them generously with the garlic butter and serve.
