These baked buffalo chicken legs are the ultimate easy chicken recipe for spicy food lovers. The homemade buffalo sauce is spicy, buttery and practically drinkable, it’s SO good. Baking the drumsticks means the finished dish is a little lighter but they can be cooked in an Air Fryer or deep fried too, if preferred.
- Chicken drumsticks/chicken legs.
- Flour.
- Baking powder.
- Salt.
For the Buffalo sauce
- Hot sauce. I used Crystal but any sauce of your choice will work.
- Butter.
- Garlic powder.
- Salt.
How to make baked buffalo chicken
- Coat the chicken: Pat the chicken dry with paper towels. Whisk the flour, baking powder and salt together in a large bowl. The baking powder is key to getting the chicken to crisp up in the oven. Add the chicken and toss to coat, making sure each piece of chicken is completely coated with the flour.
- Bake the drumsticks: Place the chicken on a wire rack set over a baking sheet then drizzle with a few tablespoons of oil. Place in a hot oven and allow to bake for 15-20 minutes until golden brown then flip over and cook for another 10 minutes or until the chicken is golden brown all over and cooked through.
- Make the buffalo sauce: Combine the hot sauce, butter, garlic powder and a pinch of salt in a small saucepan set over medium heat. Allow to come to a simmer and stir to combine then remove from the heat.
- Coat the chicken and serve: Place the baked chicken into a large bowl then pour over the buffalo sauce (this recipe makes quite a lot of sauce so I keep some back to serve alongside the chicken for dipping) then toss to coat the chicken. Serve sprinkled with chopped parsley or spring onion.
