Chicken Parmesan Meatballs

Juicy chicken parmesan meatballs in rich tomato sauce baked with mozzarella until melty and delicious is a great, easy dinner recipe.

Ingredients needed

Inspired by chicken parm, this chicken meatball recipe consists of juicy chicken meatballs cooked until golden brown then baked in a rich tomato sauce with pools of melty mozzarella. I made my own tomato sauce but you can easily use a jar of Marinara sauce or store-bought tomato sauce to save time.

  • Chicken mince/Ground chicken. 
  • Grated Parmesan cheese. 
  • Fresh breadcrumbs. I used stale bread that I blended into breadcrumbs. If you prefer using dried or panko breadcrumbs, use half the amount of fresh breadcrumbs.
  • Eggs. 
  • Dried oregano. Fresh herbs like basil, parsley or thyme can also be used.
  • Italian seasoning. 
  • Chilli flakes/red pepper flakes. 
  • Garlic powder. 
  • Salt and black pepper.
  • Tomato sauce.
  • Mozzarella. I used Fior di latte but grated mozzarella or buffalo mozzarella can also be used.
  • Fresh basil.

How to make chicken parmesan meatballs

  1. Make the meatballs: Combine the chicken with the ingredients for the meatballs in a large bowl then mix well until combined. With damp hands, form the mixture into golf-ball sized meatballs.
  2. Cook the meatballs: Heat a large skillet or non-stick frying pan over medium-high heat. Add a splash of olive oil then add the meatballs and brown for a few minuets per side. You could also bake the meatballs on a parchment paper lined baking sheet until golden brown.
  3. Bake: Pour the tomato sauce into the pan with the meatballs then top with mozzarella. Place in a hot oven and bake for 10-15 minutes until the cheese is melted and the meatballs are cooked through.
  4. Serve: Remove from the oven and sprinkle over fresh basil then serve.

These meatballs are fantastic served over cooked pasta or mashed potatoes but also make the ultimate meatball sub served inside crusty bread rolls.

  • 1 kg (2lb) chicken mince / ground chicken
  • 1 cup grated Parmesan cheese
  • 1 cup fresh breadcrumbs
  • 2 eggs beaten
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp dried oregano
  • 2 tsp Italian seasoning
  • 1 tsp chilli flakes / red pepper flakes
  • 1 tsp garlic powder
  • 6 cups tomato sauce
  • 200 g (6.5oz) mozzarella cheese
  • fresh basil

Instructions

  • Preheat the oven to 200°C/390°F.
  • Combine the chicken with the breadcrumbs, beaten egg, parmesan and seasonings in a large bowl then mix well until combined.
  • With damp hands, form the mixture into golf-ball sized meatballs.
  • Heat a large skillet or non-stick frying pan over medium-high heat.
  • Add a splash of olive oil then add the meatballs and brown for a few minutes per side. You could also bake the meatballs on a parchment paper lined baking sheet until golden brown.
