Easy Banana Baked Oatmeal

Easy baked oatmeal is the make-ahead breakfast of dreams. Warm, comforting and endlessly customizable, this has quickly become one of our family go-to’s.

The base is rolled oats, milk, eggs, a little sweetener and whatever flavors you want to add. Mix, pour into a dish, bake for 25 minutes and breakfast is done. You can make it the night before and reheat in the morning or bake it fresh. It’s also one of those recipes that works perfectly as a budget breakfast because the ingredients cost almost nothing and a single batch feeds the whole family (and more).

Ingredients and Substitutions

  • Rolled oats. I prefer using old fashioned rolled oats.
  • Milk. Any milk works. Dairy gives the richest, creamiest result. Oat milk and almond milk both work well for a lighter version.
  • Eggs.
  • Oil. I used avocado oil but melted butter also works.
  • Sweetener. Honey, maple syrup or sugar all work.
  • Baking powder. 
  • Vanilla extract. 
  • Cinnamon.
  • Bananas. Adding bananas gives incredible flavor (think banana bread), adds sweetness and moisture to the baked oatmeal.
  • Pinch of salt. 
  • Optional mix-ins: Blueberries, chocolate chips, coconut, chopped nuts (pecans, walnuts, almonds).

How To Make Baked Oatmeal

  1. Make the batter: Mash the bananas in a large mixing bowl then whisk in the eggs, milk, oil, brown sugar, vanilla and cinnamon. Stir in the oats, baking powder and salt and mix well.
  2. Bake: Pour the mixture into a greased baking dish (the one I used was 30cmx20cm or 12inx8in) then bake in a preheated oven for 25-30 minutes until golden brown and set.
  3. Cool: Remove the baked oatmeal from the oven and allow to cool for 10 minutes in the pan. Slice into 8 portions.
  4. Serve: Drizzle over a little melted peanut butter (optional) and serve with sliced bananas and blueberries.

Can I Make This Ahead?

The oatmeal can be baked and kept in an airtight container in the fridge for up to 4 days. Reheat in the microwave for 1 minute before serving.

Ingredients

  • 250 g (4 small) bananas
  • 2 eggs
  • cups milk any milk of your choice
  • cup brown sugar maple syrup or honey work too
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • ¼ cup avocado oil/melted butter
  • 300 g (2¾ cups) rolled oats
  • 1 tsp baking powder
  • 1 tsp salt

Instructions

  • Preheat the oven to 180°C/350°F and grease a baking dish (12x8in/30x20cm).
  • In a large mixing bowl, mash the bananas then whisk in the eggs, oil, milk, vanilla, cinnamon and sugar.
  • Stir in the oats, baking powder and salt then mix to combine.
  • Pour the mixture into the prepared baking dish then place in the oven and bake for 25-30 minutes until golden brown and set.
  • Remove from the oven and allow to cool for 10 minutes.
  • Cut into 8 even pieces.
  • Serve the warm baked oatmeal drizzled with melted peanut butter (optional), sliced bananas and blueberries.
