Easy Pepperoni Pizza Muffins

Ingredients needed

  • Flour. All purpose flour works well.
  • Baking powder. 
  • Salt. 
  • Sugar. 
  • Melted butter. I used salted butter but unsalted butter can be substituted.
  • Milk. I used whole milk but any milk of your choice can be used.
  • Pizza sauce. Alternatively use any tomato sauce/marinara sauce of your choice.
  • Eggs. 
  • Mini pepperonis. Chopped salami or chorizo will also work.
  • Low moisture mozzarella. Fresh mozzarella cheese will add too much moisture to the batter so it’s important to use the firmer, low-moisture mozzarella for this recipe.
  • Dried oregano. Italian seasoning can be used as substitute.
  • Fresh basil. 

What else can I add to these muffins?

All of your favorite pizza toppings will be delicious. Keep in mind that vegetables like mushrooms, green pepper and onions are better sautéed first before adding them to the batter.

How to make pizza muffins

  1. Make the batter: Combine the flour, baking powder, salt, sugar and dried oregano in a bowl and whisk together. In a separate bowl or mixing jug, whisk together the milk, eggs, melted butter and pizza sauce. Pour the wet ingredients into the bowl with the dry ingredients then stir until just combined. Fold in the cubes of cheese, pepperoni and fresh basil.
  2. Bake: Spray a muffin tin with cooking spray. I used a jumbo muffin pan (6 muffin pan) but you can use a standard 12-hole pan too. Line the pan with parchment paper or cupcake wrappers. Using a large spoon or ice cream scoop, fill the muffin pan then top with extra pepperoni (optional). Place in a preheated oven and allow to bake for 20-25 minutes until the muffins are golden brown and a skewer inserted comes out clean. Remove from the oven then allow to cool for 5 minutes and carefully remove the muffins from the pan. Allow to cool for another 10-20 minutes then serve warm.

Can I make these ahead?

These muffins are great for preparing ahead to have on hand for kids lunchboxes or as a quick snack. Allow the baked muffins to cool to room temperature then store in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months. Reheat for 30 seconds in the microwave before serving or enjoy at room temperature.
