Ham and Cheese Puff Pastry pies

- Puff pastry.
- Leftover ham / gammon. You could use bacon, prosciutto, chorizo or sliced ham too.
- Cheese. This is a great recipe for leftover cheese if you had a cheese board over Christmas. Any good melting cheese will work. Cheddar, Gruyere, Havarti, Raclette, Brie, Camembert, etc.
- Onion marmalade/onion jam.
- Egg.
- Sesame seeds. (optional)
How to make ham and cheese puff pastry pies
- Make the filling: Slice the ham into thin slices then cube. Grate or finely dice any cheese you are using and mix together. Roll out the thawed puff pastry into a large rectangle then slice into 6 squares. Place a teaspoon of onion marmalade onto the pastry then add a generous handful of filling. Brush the edges with beaten egg. Fold the one corner of pastry over to the opposite side and seal the edges by crimping with a fork. Brush the tops of the pastries with egg and scatter over sesame seeds.
- Bake: Place onto a greased baking sheet (or use parchment paper) and place in a preheated oven. Bake for 15-20 minutes until golden brown and cooked through. Remove from the oven and allow to cool for 10 minutes before serving.

- 400 g (14oz) puff pastry thawed
- 2-3 cups leftover ham / gammon cubed
- 2 cups grated cheese
- ½ cup onion marmalade
- 2 eggs beaten
- 2 tbsp sesame seeds
Instructions
- Preheat the oven to 180°C/350°F.
- Slice the ham into thin slices then cube.
- Grate or finely dice any cheese you are using and mix together.
- Roll out the thawed puff pastry into a large rectangle on a floured surface then slice into 6 squares.
- Place a teaspoon of onion marmalade onto the pastry then add a generous handful of filling.
- Brush the edges with beaten egg. Fold the one corner of pastry over to the opposite side and seal the edges by crimping with a fork.
- Brush the tops of the pastries with egg and scatter over sesame seeds.
