Meal Plan #27 of 2026

This week we are making Butter Chicken Meatballs, Spaghetti alla Nerano, Peri-Peri Baked Chicken, Chicken Noodle Soup and Smashed Burger Tacos. We’ve also had some requests to include season-appropriate alternatives to some of the dishes (think soups and salads which might not be ideal depending on the season you’re in).

Monday

Butter Chicken Meatballs

Why You’ll love this recipe:

  • Cozy yet light: I love comfort food dishes that aren’t too heavy to enjoy during the warmer months. These meatballs are exactly that.
  • Meal-Prep Friendly: The meatballs are great frozen raw then dropped into the butter chicken sauce to poach. You can also air fry them from frozen and just add to the sauce.
  • Add a side: We always eat curry dishes with rice and some naan or roti wouldn’t go amiss.

Tuesday

Spaghetti alla Nerano

Why You’ll love this recipe:

  • So simple: This is one of those showstopper pasta dishes that comes together quickly and always impresses whoever you feed it to. It’s amazing how pasta can be so creamy without adding any cream!
  • Stanley Tucci-approved: This is Stanley Tucci’s favorite pasta dish and it’s good enough for him, it’s good enough for me!
  • Add a side: Garlic bread and arugula salad turn this into a casual feast.

Wednesday

Creamy Baked Peri-Peri Chicken

Why You’ll love this recipe:

  • Meal-prep friendly: Season the chicken, cover and refrigerate for up to 2 days. The cooked chicken and rice last for up to 3 days in the fridge in airtight containers.
  • Add a side: We love the chicken and rice on their own but a quick chopped salad is our fave side dish here.

Thursday

Creamy Chicken Noodle Soup

Why You’ll love this recipe:

  • Family Friendly: No-one can resist this creamy, delicious soup.
  • Makes great leftovers: Make the soup, leave out the pasta and keep in the fridge for days for easy lunches. The soup without pasta also freezes really well.
  • Add a side: This is a meal all on its own but some crusty bread is always delicious with soup.
  • Seasonal swap: If you’re in the thick of summer, try my Easy BBQ Chicken instead.

Friday

Smashed Burger Tacos

Why You’ll love this recipe:

  • So easy: I don’t have energy for fuss on a Friday night so these burger tacos work perfectly. They come together quickly and give you all the same satisfaction as a Big Mac would, with half of the calories.
  • Make-ahead tips: To make Friday even easier, season the beef, portion into balls and freeze in a freezer bag. Thaw on Friday morning and smash onto the tortillas right before cooking. The burger sauce can also be made days in advance.
