The 15-Minute Dinner Formula

Every 15-minute dinner I make follows the same formula. Once you know it, you’ll never stare at the fridge wondering what to cook again.

The formula has four parts: one quick-cooking protein, one easy starch, a sauce or dressing to bring it together and a no-cook vegetable for freshness. Every combination of those four things gives you a completely different dinner in about 15 minutes. The six meals below prove how versatile the formula is: six different cuisines, six different flavor profiles and not one of them takes more than 15 minutes from fridge to table.

The Formula

1. Quick-cooking protein. Thin chicken cutlets, prawns, canned tuna, eggs or rotisserie chicken. These all cook in under 10 minutes or require no cooking at all. The protein is the anchor of the meal and choosing one that cooks fast (or is already cooked) is what keeps the whole dinner under 15 minutes.

2. Easy starch. Microwave rice or grains, couscous, frozen rice, ramen noodles, tortillas or crusty bread. The key is that they’re either instant, frozen or cook in boiling water in under 5 minutes. If the starch takes 20 minutes to cook, the meal takes 20 minutes. Choose starches that match the speed of the protein.

3. A sauce or condiment. Chili crunch/chilli crisp, soy sauce, miso, a jarred tomato sauce, mayo, sriracha, a stir fry sauce or a spice blend. The sauce is what gives each meal its identity. The same chicken and rice becomes Japanese with soy sauce, Moroccan with spices or Italian with tomato sauce. The sauce does the flavor work so you don’t have to.

4. A no-cook vegetable. Sliced cucumber, edamame, radishes, tomatoes, avocado, spring onion, chickpeas, fresh herbs or pomegranate. Something raw, fresh or crunchy that you add at the end without any extra cooking. It balances the plate, adds texture and nutrition and requires zero additional time.

Chicken Tacos with pico de Gallo.

Chicken Tacos with Pico de Gallo

Seasoned chicken, a quick pico de Gallo and guacamole all in a charred tortilla. So simple, absolutely delicious and a family favorite.

The formula: Chicken + tortillas + tomatoes, onion & cilantro + avocado + taco seasoning

Easy Spicy Tuna Rice Bowl.

Spicy Tuna Rice Bowl

Microwave rice, canned tuna mixed with mayo and sriracha, sliced cucumber, edamame, radish, seaweed snacks and a drizzle of chili crunch. This requires zero cooking beyond heating the rice. The chili crunch ties the whole thing together and turns a humble can of tuna into something you’d happily order at a restaurant.

The formula: Canned tuna + microwave rice + sriracha & mayo + cucumber, edamame, seaweed and chili crunch

Miso noodles with prawns.

Miso Noodles with Prawns

Ramen noodles, prawns sautéed for 2 minutes per side and miso paste stirred into the broth. Peas are a lovely addition here. I simply used 500g/1lb frozen and thawed shrimp/prawns, seasoned with salt and garlic powder and sautéed them in the pan before making the sauce in the same pan. This tastes better than most take-out and is ready faster too.

The formula: Prawns + ramen noodles + miso

Easy Shakshuka in a pan with fresh herbs.

Shakshuka

A jarred tomato sauce poured into a pan, brought to a simmer, eggs cracked directly into the sauce and cooked until the whites are set and the yolks are still runny. Topped with fresh chillies and herbs. Served with crusty bread for dipping. This is technically breakfast food but it’s one of the best dinners you can make in 15 minutes and almost everything comes from the pantry.

The formula: Eggs + crusty bread + jarred tomato sauce + fresh chillies and herbs

Moroccan Chicken CousCous Bowls with cucumber and pomegranate.

Moroccan Chicken Couscous Bowls

Couscous, thin chicken cutlets rubbed with Moroccan spices and pan-fried, marinated chickpeas (olive oil, lemon juice, salt, pepper) and fresh cucumber and pomegranate scattered over the top. The couscous just needs boiling water and 5 minutes. The chickpeas need zero cooking. Fresh, vibrant and incredibly satisfying.

The formula: Moroccan-spiced chicken + couscous + marinated chickpeas + cucumber and pomegranate

Chicken fried rice made with rotisserie chicken.

Chicken Fried Rice

Frozen savory rice straight into a hot pan, shredded rotisserie chicken tossed in and a splash of stir fry sauce to bring it all together. This is the fastest meal on the list because the rice is pre-cooked and might already contain vegetables, the chicken is pre-cooked and the sauce is pre-made. You’re just assembling and heating. Can you add more veg? Of course! A bag of stir-fry mix will be great here. Do you need to? Absolutely not on a Tuesday night when cooking dinner instead of ordering in was the triump.

The formula: Rotisserie chicken + frozen rice + stir fry sauce + whatever vegetables you have
