Air Fryer Chicken Pot Pie

I love using my air fryer for recipes I would traditionally make in the oven. Not only does the air fryer use less electricity it also takes a fraction of the time to heat up – making cooking faster and more cost efficient. We love this air fryer pot pie recipe because it comes together so quickly (using rotisserie chicken is my favorite hack) and delivers a super comforting, warm dinner. For an even quicker shortcut, use frozen pot pies!

Ingredients and Substitutions

  • Rotisserie chicken. I always turn to a rotisserie chicken when I make a chicken pot pie. Half of the work has been done for me! You can use cooked chicken breast meat too.
  • Bechamel sauce. Substitute with a can of cream of mushroom soup or cream of chicken soup.
  • Vegetables: I used onion, carrot, celery and garlic. Mushrooms, broccoli, potatoes, peas, frozen mixed vegetables etc. can all be added.
  • Spices: I used dried thyme, salt and black pepper. Oregano, rosemary, sage, parsley, garlic powder can all be added.
  • Puff pastry. Use any pie crust of your choice. Biscuit dough is also a great option.
  • Egg.

How to cook a chicken pot in the air fryer

  1. Make the filling: Sauté the chopped vegetables in a splash of olive oil or a knob of butter until soft and translucent. Season with salt and pepper. Break the rotisserie chicken down by removing the skin and any bones then chop the breast meat and shred the thigh meat. Add to a large bowl then add the veggies and the béchamel sauce. Taste and adjust seasoning if necessary.
  2. Assemble: Transfer the pot pie filling to a heat-proof dish that will fit in your air fryer basket. A foil container is also a great option or you could use ramekins and make individual pies. Top with the thawed puff pastry, cut off any excess pastry then crimp the edges. You can also use a fork to seal the edges. Cut two vents into the middle of the pastry with a sharp knife then brush with egg wash.
  3. Air fry: Air fry the chicken pot pie at 320°F/160°C fr 15 minutes then turn the heat up to 400°F/205°C and cook for another 5-7 minutes until the puff pastry is crisp and golden. Remove from the air fryer and serve.

Can I make this ahead?

Yes! This pot pie is a great prep-ahead dish. Assemble the pie all the way up to cooking then cover with foil or plastic wrap and store in the fridge overnight before cooking. Any leftovers can be kept in an airtight container in the refrigerator for up to 3 days.

Ingredients
