Chicken Parmesan Sandwich

You’re going to love this Chicken Parmesan sandwich with crispy, juicy chicken topped with rich tomato sauce and mozzarella on crusty bread with basil pesto mayonnaise. It’s the ultimate sandwich!

Chicken Parmesan Sandwich

Ingredients needed

For the Chicken Parmesan

  • Chicken breasts. I used boneless skinless chicken breasts but boneless thighs will also work.
  • Flour. 
  • Eggs. 
  • Panko breadcrumbs. 
  • Seasoning: Salt, black pepper, dried oregano and garlic powder.

For the sandwich

  • Bread. I used crusty olive bread but baguette, ciabatta or panini rolls will all work.
  • Tomato sauce. I used my roasted tomato sauce but use any homemade or store-bought sauce of your choice.
  • Mozzarella. 
  • Fresh basil.
  • Basil pesto. 
  • Mayonnaise.

How to make Chicken Parmesan Sandwich (summary)

  1. Bread the chicken: Slice the chicken in half to create two thin cutlets. Season the breadcrumbs with salt, pepper, garlic powder and oregano. Coat the eggs first in the flour, then in beaten egg and finally in the seasoned breadcrumbs. For a thicker crust, repeat the egg and breadcrumb steps.
  2. Cook the chicken: Heat oil in a large pan or skillet set over medium-high heat. Add the chicken to the pan and cook for 3-4 minutes per side until crisp, golden and cooked through. Remove from the pan and allow to drain on paper towels then transfer to a baking sheet.
  3. Bake: Top the chicken with a spoonful of tomato sauce and mozzarella. Place in the oven and allow to bake for 10 minutes until the cheese has melted.
  4. Assemble the sandwich: Stir the basil pesto into the mayonnaise. Assemble the sandwich by layering tomato sauce, the chicken parm and basil pesto on bread of your choice and add fresh basil leaves. Serve immediately.

Can I make this ahead?

The chicken can be breaded and kept in the refrigerator for up to an hour before cooking. The chicken will lose its crunch the longer it sits after cooking.
