Cucumber Tomato Salad with Whipped Feta
A simple, fresh cucumber tomato salad on whipped feta is a delicious, healthy side dish or simple lunch recipe.

Ingredients
- Cucumber. I used English cucumbers but Persian cucumbers or mini cucumbers will all work.
- Tomatoes. I used baby Roma tomatoes and regular salad tomatoes but you can use any variety of your choice. Cherry tomatoes/grape tomatoes would be delicious.
- Shallots/red onion.
- Feta cheese.
- Olive oil.
- Salt and black pepper.
- Basil oil/basil pesto. Optional.
- Fresh lemon juice. Red wine vinegar, white wine vinegar or Balsamic vinegar can be used instead.
- Fresh basil leaves. (optional) Other fresh herbs like dill, parsley or chives can be used as substitute.
How to make cucumber tomato salad
Start by making the whipped feta. Combine feta cheese, a few tablespoons of olive oil and a generous pinch of black pepper in a blender. Blend until smooth. Using a spoon, spread the whipped feta onto a serving plate or bowl.
Peel the cucumber and chop roughly. Slice the tomatoes into rough shapes and thinly slice the shallots. Place the cucumber, tomato and shallots on top of the feta and drizzle with lemon juice, basil oil and a generous pinch of salt. Serve immediately.
Can I make this ahead?
The whipped feta can be made up to a week in advance and kept in covered small bowl or airtight container in the refrigerator. The finished cucumber salad can be made up to an hour in advance but only add the lemon juice and salt right before serving.
What to serve with cucumber tomato salad
This salad is the perfect side dish to protein like grilled or roasted meat or chicken and makes a delicious lunch served with crusty bread.
