Carrot salad can sound quite boring. I know, because it does to me. But this salad is anything but boring. Simple? Yes! In fact, this salad only needs a handful of ingredients and most you’re likely to already have lying around.
Ingredients Needed
- Carrots.
- Extra-virgin oil.
- Dijon mustard.
- Fresh oranges and lemons.
- Honey.
- Salt and black pepper.
- Fresh parsley, for garnish.
How to make carrot salad
- Prepare the carrots: Peel the carrots then using a julienne slicer, thinly slice the carrots. You can also grate the carrots on a box grater or slice thinly with a sharp knife.
- Make the dressing: In a large bowl, whisk together the olive oil, mustard, orange juice, lemon juice, honey, salt and pepper. Add the carrots then toss to coat.
- Serve: Transfer to a serving dish or bowl and garnish with fresh parsley then serve.
Can I make this ahead?
This salad can be made up to 20 minutes before serving. The carrots will be soggy if you leave them in the dressing for much longer than that.
