Meal Plan #32

This week we are feasting on the creamiest chicken and broccoli alfredo bake, a vegetarian rice bowl, easy beef stew and juicy chicken skewers. We also have nachos for the weekend, healthy breakfast options and the most delicious easy tomato soup for lunch.

Monday

Baked Chicken and Broccoli Alfredo

Why You’ll love this recipe:

  • Easy to make.
  • Family friendly.
  • Uses every day ingredients – nothing special or fancy. 
  • Easy swops: Use any veg you have instead of the broccoli. Can also be made vegetarian by omitting the chicken and using a veggie-friendly Parmesan cheese.

Tandoori Sweet Potato Rice Bowl

Why You’ll love this recipe:

  • Make-ahead: The sweet potatoes, chickpeas and rice can all be cooked ahead.
  • Easy to add protein: Add leftover or baked chicken breast for a protein-boost.
  • Uses pantry staples: Rice, chickpeas and spices are in most households pantries and relatively affordable. 
  • Easy swops: Butternut squash, potatoes or cauliflower can be used instead of sweet potatoes. The spices can also be toned down if you’re cooking for little kids or those who can’t tolerate spice.

Wednesday

Easy Beef Stew

Why You’ll love this recipe:

  • Make-ahead: Stews are great to make-ahead as their flavor improves the longer they sit. Make the stew the night before and reheat before serving. This recipe also freezes well and the leftovers are delicious for lunch.
  • Affordable: Use any cost-effective cut of beef. I prefer chuck because it’s relatively lean, cooks quicker than other cuts and is affordable. Beef shin, oxtail, short ribs, etc. can also be used.
  • Uses every day vegetables: Onion, celery and carrots form the base making it a great way to use up sad-looking veg in the fridge. 
  • Easy swops: Use whichever herbs you have in the fridge. Feel free to add vegetables like potatoes, peas or green beans.

Greek Grilled Chicken Skewers

Why You’ll love this recipe:

  • Make-ahead: The chicken can be marinated and kept in the fridge for up to 24 hours. The leftovers are also delicious the next day and can be served room temp for lunch boxes.
  • Healthy: This recipe is high-protein, dairy-free and gluten-free.
  • Affordable: Uses affordable chicken breasts and basic pantry staple seasonings.

Friday

Air Fryer Nachos

Why You’ll love this recipe:

  • So Easy: This recipe is so easy, the kids could make it themselves.
  • Family-friendly: Who doesn’t love nachos?!
  • Customisable: Add leftover shredded chicken or ground beef to add protein. Clear the fridge by adding fresh herbs, cucumber, tomatoes, etc. as fresh toppings. Use a combination of cheeses if you have a few random chunks left in the fridge. Serve with sour cream or Greek yogurt.
  • Can be made in the oven: Don’t have an air fryer? No Problem! Assemble the nachos on a sheet pan lined with foil or parchment paper and bake until hot and melty.
