Meal Plan #6 of 2026

This week we are eating crispy Chicken Milanese, Pork Belly Tacos, Zucchini Risotto and Tomato Bacon Pasta. We also have the perfect steak for the weekend.

Monday

Chicken Milanese with Grinder Salad

Why You’ll love this recipe:

  • Family-Favorite: Crispy chicken with a big refreshing salad is a match made in heaven and guarantees empty plates.
  • Great for meal prep: The chicken can be breaded and either kept on parchment paper in an airtight container in the fridge for up to 2 days or frozen and air-fried from frozen. The dressing for the salad can also be made ahead.

Tuesday

Pork Belly Tacos

Why You’ll love this recipe:

  • So easy! The pork belly is baked or air fried until crisp and golden and the sauce comes together in minutes.
  • Customizable: Add any of your favorite taco toppings. Salsa, pico de Gallo, charred corn, etc. are all delicious options.

Zucchini Risotto

  • Creamy and satisfying: Risotto is always one of my favorite comfort foods and this one is particularly delicious.
