A simple salad like this avocado one is always on my go-to list for easy side dishes. They work perfectly served with grilled meat, chicken or fish and completes an uncomplicated lunch of crusty bread and cheese. And they are always made so much better when in-season produce is used. Aromatic, ripe tomatoes and creamy avocado are a match made in heaven and perfectly complimented by fine slices of red onion and a lemony basil vinaigrette.

How to make tomato avocado salad

Use a variety of ripe tomatoes and slice them differently to create texture and interest. Larger tomatoes can be roughly chopped, cherry tomatoes and smaller ones can be halved. Place them into a bowl and season generously with salt and pepper. Tomatoes can handle a lot of salt and the salt not only seasons the tomatoes, it also draws out their juice which make the dressing all the more delicious.

Peel and chop a few ripe avocados into large chunks and place in the bowl with the tomatoes. Thinly sliced red onion and add. Pour over the dressing, gently mix and serve.

How to keep avocado salad from turning brown

Avocados brown when they are exposed to oxygen. There are many gimmicks to preventing this but the best is to only slice the avocado close to when you plan to serve it and dress it with fresh lemon or lime juice to delay the browning from happening.

What salad dressing goes with avocado

A simple lemon vinaigrette or Balsamic dressing is delicious with avocado. To compliment both the avocado and the tomatoes, I made a lemon-basil vinaigrette to dress this salad.

Ingredients

  • 500 g (1lb) tomatoes roughly chopped
  • 2 avocados peeled and chopped
  • 1 small red onion thinly sliced

For the lemon basil vinaigrette

  • 3 tbsp fresh basil finely chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • salt and pepper to taste

Instructions

  • Place the tomatoes in a large bowl then season generously with salt and pepper.
  • Add the avocado and red onion.
  • Mix together all the dressing ingredients and pour over the salad.
  • Gently toss to coat the vegetables in the dressing then serve.
