Easy Sheet pan Harissa Chicken
Juicy harissa chicken is delicious baked with sweet potatoes and red onion to make an easy and tasty sheet pan dinner.

Ingredients

- Harissa paste.
- Honey.
- Lemon juice.
- Salt.
- Sweet potatoes.
- Red onion.
- Chicken thighs. Bone-in, skin-on thighs. Leg portions will also work.
How to make harissa chicken
- Make the harissa seasoning: Combine harissa, lemon juice, olive oil, honey and salt and mix well.
- Season the vegetables: Peel and cube the sweet potato and chop the onion. Place in a large bowl and season with olive oil, salt and 2 tablespoons of the harissa mix. Place in a large sheet pan. Season the chicken on both sides with salt then brush over the remaining harissa, making sure each piece is liberally covered. Place the chicken in between the vegetables.
- Bake: Place the sheet pan in the oven and allow to bake for 30-40 minutes until the sweet potatoes and chicken are caramelized and cooked through. Remove from the oven then garnish with coriander/cilantro and fresh chopped chillies.
Can I make this ahead?
The chicken and vegetables can be prepped and seasoned a day in advance then covered with foil and kept in the fridge until ready to bake. Leftovers can be refrigerated for up to 3 days.

Ingredients
- ½ cup harissa paste
- 1 tsp honey
- 2 tsp lemon juice
- 1 tsp salt
- 1 tbsp olive oil
- 2 large sweet potatoes peeled and cubed
- 1 red onion roughly chopped
