Meal Plan #28

This week’s meal plan includes Taco-Stuffed Sweet Potatoes, Baked Lemon Chicken and Rice, Lasagna Soup, Creamy Sage Chicken and Shrimp Curry. We’ve also had some requests to include season-appropriate alternatives to some of the dishes (think soups and salads which might not be ideal depending on the season you’re in).

We’ve also included a completed shopping list for your convenience. Simply click on the link and download! (Please note the shopping list does not include ingredients for breakfast and lunch recipes as these are optional. There is however space to add any ingredients you’ll need.)

Monday

Taco-Stuffed Sweet Potatoes

Why You’ll love this recipe:

  • Cozy yet light: I love comfort food dishes that aren’t too heavy to enjoy during the warmer months.
  • Meal-Prep Friendly: Make the taco meat in advance and keep in the fridge or freezer. The sweet potatoes can also be baked and kept in a container in the fridge and reheated in the oven or microwave before serving.
  • Add a side: These are a meal on their own but pile them high with pico de Gallo, guacamole and sour cream.

Lasagna Soup

Why You’ll love this recipe:

  • Meal-prep friendly: This is my favorite recipe to make with frozen bolognese sauce. Pop the frozen sauce in a pot with plenty of stock and cook the pasta right in the soup as it simmers. So easy, so delicious.
  • Summer-friendly alternative: If you’re in the Northern Hemisphere and can’t bare the thought of soup, use my bolognese recipe and serve it with al dente spaghetti and a mountain of Parmesan cheese.

Creamy Sage Chicken

Why You’ll love this recipe:

  • Family Friendly: A delicious, creamy chicken dish that is mild-enough in flavor to not be offensive to picky palates.
  • Add a side: You can go so many ways with this chicken dish. Serve with mashed potatoes and green beans for a cozy dinner or add rice and a big salad for something a little lighter.
  • Seasonal swap: If you’re in the thick of summer, try my Greek Chicken Salad instead.

Creamy Shrimp Curry

Why You’ll love this recipe:

  • So easy: Friday night meals need to come together quickly and deliver huge on flavor. That’s exactly why I love this shrimp curry. It’s also great for serving to guests since it feels fancy but is so easy to make.
  • Seasonal Swap: I personally love a shrimp curry all-year round since it’s not too heavy but if you’d prefer a summery alternative, try my grilled shrimp skewers and serve with a big salad.
