Meal Plan #34

This week we are enjoying a one-pan orzo and chicken dish, smash burger tacos, creamy salmon pasta and tomato soup. We also have steak kebabs for the weekend, healthy breakfast options and the perfect salad sandwich for lunch.

Creamy Salmon Pasta

  • Quick and easy: This recipes comes together in less than 30 minutes.
  • Adaptable: This recipe can be made with fresh, frozen or canned salmon. Tuna is a great substitute.
  • Make it lighter: If you’re trying to cut down on fat, use milk and a few teaspoons of cornstarch instead of the cream to make the sauce a little lighter.

Thursday

Tomato Soup with Grilled Cheese

  • Family friendly: I’ve yet to find the person who can resist tomato soup with grilled cheese. Picky eaters included!
  • Make-ahead: Soups are great to make ahead and freeze or keep in the fridge for a few days. The leftovers are also delicious for lunch the next day.

Friday

Easy Steak Kebabs

Why You’ll love this recipe:

  • So Easy: The hardest part is assembling the kebabs and that takes no more than 10 minutes.
  • Prep ahead: The steak can be marinated for a day in advance and the assembled skewers can be kept in an airtight container for up to 2 days in the fridge before cooking.
  • Customisable: Use the vegetables your family enjoys! Mushrooms, bell peppers, zucchini, onion, cherry tomatoes, etc. are all good options.
